slow cooker cheese stuffed meatballs & sauce

My hubby loves spaghetti and meatballs. I have only made them one time (and I wasn't crazy about the recipe) until last night and let me tell you, they were SO good! I used this recipe by Paula Deen. There are a few reasons I loved it-

1. You cook it in a slow cooker for 5 hours so when I got off work last night all I had to do was boil my noodles & cook the garlic bread.
2. They are stuffed with mozzarella CHEESE!!
3. It was soo easy and soo good!
Yummmm :) You can still see the steam. A few things I changed about the recipe. For one, I cut the recipe in half. It calls for 1 lb of ground beef and 1 lb of ground pork. I only used ground beef because that was all I had and it was still good. Also, instead of using fresh mozzarella, I used shredded mozzarella. And when I put it all in my crock pot, I also added garlic, onions, and mushrooms. (Josh doesn't like mushrooms so I use the big ones so I can pick them out for me :) ) Anyway, I will definitely be making this again!

baby changing table makeover





My best friend, Annie, is having a baby girl and is due on June 8th :) I am SOOO excited! Her mom saved her crib she used when she was a baby...and her MIL gave her a dresser to use. All she needed was a changing table. Well, a few weeks ago me and my mom were at my fav thrift store in Nashville (Southern Thrift Store) and I saw this changing table for only $18.99! I knew it had potential. This is the pic I sent to Annie on my cell to see if she liked it...not a great pic...
So last Friday I took off work and went to help her paint the dresser and changing table. I just figured it would fit in my car but it wouldn't so Josh had to take it apart. When I got to Annie's we had to put it back together and I wish we could have had a picture of that! HA! But anyway, It was a GORGEOUS day! Doesn't she look soooo cute with her little belly :) I glued this cute thing on here- not sure what you call it but you can get them at Lowe's or Home Depot. I thought it gave it a cute girly look.Here it is after we primed and painted just one coat. She still needs to do another coat. She registered for some cute baskets to put on the shelves. We thought it turned out super cute!

Easter 2010

Easter was so much fun yesterday! We went to church and it was so good. It was our new pastors first Sunday and I really enjoyed his sermon. I love Easter. Not only because of all the food and candy and family time..but it makes me think of my Savior and the price he paid for me! After church, we all went over to Josh's Granny's house for lunch. They always invite my parents also which makes it SO much fun to have everyone together. The food was wonderful, as always, and the company was too! Me and my hunny :) He stopped reading the paper for about 5 seconds to take a picture with me! He hates taking pictures..Me and my sister in law, Sarah. (Josh's sister)Me & my parents after lunch. They are the best!Me and both of my sister in laws! The one on the left is Tiffani, she is married to Josh's brother and they are expecting their first baby in August. They just found out Friday that they are having a GIRL!!! I'm going to be an aunt :) I am going to have to try not to buy every cute pink thing I see! She will be the first grandchild too so I'm sure she will not be spoiled at all :)My sweet in laws!

It was SUCH a beautiful day so we went out on the boat for a little while. Here is Josh doing what he loves to do most- fish! And he caught a bunch!

my moms blog!

I am happy to announce that my mom has started her own blog! :) She is so good at refinishing furniture and has some really cute things to share. She is the one who always helps me out with my things and I don't know what I'd do without her! You should check out her blog- she just refinished a chair and it is SUPER CUTE!

sugar free strawberry shortcake

My dad is a diabetic so I am always on the look out for desserts that I can make that are sugar free. This is not your typical strawberry shortcake but it is sugar free and SO good :)

ingredients:

1.5 oz container of sugar free fat free instant vanilla pudding
1 container of sugar free cool whip
T.Marzettis sugar free glaze for strawberries (got it at WalMart)
1 container of strawberries
sugar free angel food cake (also from WalMart)

directions:

Mix pudding according to directions on package and let it set. Mix in most of the cool whip. Leave a little left over for topping :)

Cut up strawberries into chunks. Leave about 4 strawberries leftover for topping. Mix in the sugar free strawberry glaze.
Cut the angel food cake in half 3 ways and start layering.. Top with leftover cool whip and strawberries and this is what you will get :) Enjoy!(You can't tell in the pic but there are 3 layers of angel food cake!)

flea market love :)

Yesterday me and my mom went to the Nashville flea market. It was a gorgeous day! There were tons of cute things. I ended up leaving with some early Christmas presents for family :) and some strawberry jam that was made by the Amish. My goal this year is to start buying Christmas presents all throughout the year. For one, it is easier on the wallet and for two, it just helps me to enjoy the holidays more and not stress over gift buying. Anyway, it was SUCH a fun day :) I would LOVE to have this table and chairs. I am in love with the farmhouse tables and I'm thinking about painting mine like this. (white on bottom, dark on top)
Today is kinda yucky. Its colder and dreary- a perfect day to take a nap on the couch. I am really looking forward to this week though, its supposed to be so pretty! Maybe I will get around to painting my shutters & cleaning out my car :) Have a great day!

please pray

I have been watching the news and just read on the internet that there has been a wreck in Kentucky not far from here. A semi and a van collided and 11 people were killed. The people in the van were Mennonites on their way to a wedding. There was an assistant pastor that was killed, also a couple who were engaged to be married in July. I do now know these people but feel just terrible because I cannot imagine what the families and friends are going through. Please be praying for these people. You can read the full story here.
